Squash
Summer Squash is harvested early, when the skin is thin and tender.
Summer Squash:
- Yellow Crookneck – One of the most popular squash. Yellow fruit has a meaty, flavorful interior. 50 days to maturity.
- Yellow Straight Neck – Uniform, yellow fruit are 10-14 inches long. Plants are semi-open and bushy. 55 days to maturity.
- Zucchini, Dark Green – Vigorous plants bear lots of smooth, straight fruit with dark green skin and greenish-white flesh. 45-65 days to maturity.
- Zucchini, Yellow – Bright yellow fruit are 6-8 inches long. 54 days to maturity.
Winter Squash is harvested when the rind is think and hard, making it easy to store.
Winter Squash:
- Acorn – Acorn shaped fruit have a black-green rind and excellent flavor. Plants have a semi-bush habit. 70 days to maturity.
- Butternut Waltham – Great for baking; fruit is 9 inches long and 4-5 inches wide with a nutty flavor. An All-America Selections winner. 90 days to maturity.
- Spaghetti – Oblong, yellow fruit has a pasta-like interior. Can be stored for several months if kept cool and dry. 100 days to maturity.
